- ✅ What Tieguanyin Tea Is: Tieguanyin tea (tekkannon-cha) is a type of Chinese tea; it is one of the oolong teas (qingcha), which are semi-oxidized. It is counted among China's ten famous teas. Representative varieties include China's Anxi Tieguanyin and Taiwan's Muzha Tieguanyin. This Tieguanyin is a qingxiang (clear/floral-aroma) type Tieguanyin made from spring tea harvested in Anxi, Fujian Province, China. Locally it is called tieguanyin or anxi tieguanyin.
- ✅ Origin: In recent years, lightly roasted, floral-type Tieguanyin has become popular across China and is widely enjoyed outside Fujian Province as well. Production methods have changed and evolved over time; today, among "floral" styles there are broadly three types of floral Tieguanyin: zhengwei, xiaoqing, and tuosuan. Each has distinct taste and aroma, but zhengwei and xiaoqing are the most popular. Zhengwei is known for its rich, sweet taste, while xiaoqing is prized for its fresh, uplifting aroma. Generally, zhengwei tends to suit Japanese tastes more, whereas xiaoqing gives an impression of a slightly raw, dynamic flavor favored by local tea connoisseurs.
- ✅ In Anxi, inland mountain areas such as Xianghua and Gande are called "Inner Anxi" and are known as good producing regions for high-quality Tieguanyin. This season we have sourced a traditional-method floral Tieguanyin from Huaizhi Village in Gande—famous for being exceptionally delicious—made in the zhengwei style. - ✅ Flavor and aroma characteristics: 1. The Tieguanyin variety is characterized by a languid, sweet, orchid-like fragrance and a juicy, refreshing peach-like flavor. It is rich and full-bodied, with a sweet aftertaste. Many Tieguanyin teas are stronger than typical oolong teas. 2. The floral aroma and flavor unique to the Tieguanyin variety are called "yinyun" (音韻). 3. The color of the brewed tea (infusion) ranges from golden to a bright apricot hue.
- ✅ Production method and tea leaves: ① The tea leaves are characterized by being tightly rolled through vigorous kneading (the rolling process), taking on a metallic or lightly oiled sheen. ② In the Tieguanyin method, the leaves undergo repeated intense kneading and a distinctive process of wrapping them in cloth, forming them into dumpling-like shapes, kneading them, then loosening them. This causes the leaves to become tightly compacted and then open up widely when hot water is poured over them. ③ Tieguanyin is a rare tea, making up about 5% of total oolong tea production.
- ✅How to Enjoy: 1. Put the appropriate amount of tea leaves into a teapot (one portion per person), and pour in boiling water (100°C). *One serving of tea leaves is 3–5 g. 2. To remove scum and bring out the aroma, immediately discard the first brew of water. 3. Pour hot water again, cover, and steep for 30 seconds. 4. Pour into cups little by little so the strength is even. Step 2 can be omitted if you prefer. For the second and subsequent brews, adjust by steeping a little longer. You can enjoy about three infusions.
